Sin embargo, en d\u00e9cadas recientes la producci\u00f3n lechera moderna ha experimentado muchas evoluciones en el desarrollo de mejoras en gen\u00e9tica, nutrici\u00f3n, manejo de granja y bienestar animal. En la actualidad, en todo el mundo existen aproximadamente 250 millones de vacas que producen leche. En 2019, la producci\u00f3n mundial de leche lleg\u00f3 a 852 millones de toneladas, un aumento del 1.4 por ciento con respecto a 2018.<\/p>\n

Las vacas lecheras modernas se reproducen espec\u00edficamente para producir grandes cantidades de leche. Las vacas solo producen leche despu\u00e9s de parir, de tal forma que para seguir produciendo leche es necesario que las vacas lecheras tengan un ternero al a\u00f1o. En este aspecto, la producci\u00f3n lechera est\u00e1 muy ligada a la reproducci\u00f3n. El mejoramiento gen\u00e9tico tambi\u00e9n ha permitido ubres con mejor forma y posici\u00f3n para facilitar la orde\u00f1a, reducir la mastitis y disminuir el n\u00famero de muertes durante el parto. <\/span><\/p>\n

\nLa producci\u00f3n de leche moderna se relaciona con un aumento en el tama\u00f1o de las granjas, mayor espacio por vaca, mayor espacio en comedero por vaca, condiciones de cama m\u00e1s c\u00f3modas, acceso m\u00e1s f\u00e1cil al alimento y el agua, mejor control del clima para evitar estr\u00e9s por calor y mejor manejo de las vacas en transici\u00f3n. Hoy en d\u00eda nuestro objetivo es aumentar los s\u00f3lidos l\u00e1cteos, particularmente la grasa y prote\u00edna l\u00e1cteas, sin sacrificar el rendimiento de la leche. Esta desafiante tarea requiere nuevas formas de optimizar la nutrici\u00f3n del ganado lechero al mejorar la digestibilidad de las fibras estructurales en sus dietas. <\/span><\/p>\n

La investigaci\u00f3n cient\u00edfica muestra que una mejor digestibilidad de la fibra resulta en mayor producci\u00f3n de AGV en el rumen, espec\u00edficamente butirato y acetato, necesarios para la s\u00edntesis de \u00e1cidos grasos de novo en la gl\u00e1ndula mamaria.
